The Irish side beat Wales and the Austrian national side in the lead-up to the final, which they won 26-14 against the defending champions Wooden Spoons.
The Elite tournament featured an English based player development selection playing as the Injured Players Foundation, Scotland playing as the Scottish Select, Austria, RAF Pumas, Wales, Norway, Irish Lightening and the Wooden Spoons.
The Irish beat the Scottish side in the semi -finals while Wooden Spoons defeated the Injured Players Foundation.
In the final the Irish side were too strong winning 26-14 with the likes of Lynne Cantwell and Joy Neville putting in excellent performances to help seal the win.
Ireland, Wales, Scotland and Norway used the tournament as preparation for the upcoming FIRA AER World Cup qualifiers in Belgium.
Wales were the winners of the Plate competition in the Elite tournament.
In the Womens Open tournament, defending champions the Pirates were narrowly beaten by Premiership side Saracens who went unbeaten throughout the day.
Meanwhile Spain finished winners of the first women's Benidorm Sevens last weekend (25/26th May). Originally planned as a four way tournament involving Spain, Russia, Kazakhstan and Tunisia, organisers were forced into a last minute rethink when an airport strike in Tunis forced Tunisia's last minute withdrawal.
The new tournament saw each team play each other three times over the two days, with the leading two sides then meeting in the final. With coaches taking the chance to shuffle their squads Russia dominated the Friday sessions with a one hundred percent record - two comfortable over Kazakhstan, and two narrow victories over Spain (17-15 and 20-17). Spain also beat the Kazakhs in both of their games, without conceding a point.
Saturday saw Spain far more focused. In temperatures of over 30 degrees they completed the pool with wins over Kazakhstan (24-14) and Russia (26-10), and then lifted the trophy with a 19-10 win over Russia in the final.
